- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup chopped vegetables (spinach, bell peppers, onions)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Whisk together eggs and cottage cheese until smooth.
- Stir in shredded cheese, chopped vegetables, and season with salt and pepper.
- Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until set and golden on top.
- Cool for a few minutes before removing from the muffin tin and enjoy warm.
Notes
These egg bites can be stored in the refrigerator for 4-5 days or frozen for up to three months. Reheat in the microwave or oven.
