Delicious and nutritious egg bites packed with protein, perfect for a grab-and-go breakfast.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped vegetables (spinach, bell peppers, onions)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk together eggs and cottage cheese until smooth.
  3. Stir in shredded cheese, chopped vegetables, and season with salt and pepper.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until set and golden on top.
  6. Cool for a few minutes before removing from the muffin tin and enjoy warm.

Notes

These egg bites can be stored in the refrigerator for 4-5 days or frozen for up to three months. Reheat in the microwave or oven.
