- 1 cup mashed ripe bananas
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix the mashed bananas, buttermilk, egg, melted butter, and vanilla extract until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Serve warm with syrup or your favorite toppings.
Notes
Use ripe bananas for best flavor. Don’t overmix the batter. Adjust cooking temperature if needed.
