Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth.
  3. Add in the vanilla extract and egg, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the mini marshmallows and chocolate chips if using.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use creamy peanut butter for the best texture and consider adding a sprinkle of sea salt on top before baking for a sweet and salty flavor.
