  • 1 pre-made tart crust
  • 2 cups eggnog
  • 3/4 cup heavy cream
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for caramel shards)
  • 1/2 cup water (for caramel shards)

Instructions

  1. In a saucepan, combine the eggnog, heavy cream, sugar, and cornstarch. Whisk over medium heat until warmed and the sugar has dissolved.
  2. In a separate bowl, whisk the egg yolks until well-beaten. Gradually add the warm eggnog mixture to the yolks while whisking constantly to prevent curdling.
  3. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes. Remove from heat, stir in the vanilla extract, and pour this creamy mixture into the pre-made tart crust.
  4. Refrigerate the tart until it sets, approximately 4 hours. While the tart is chilling, prepare the caramel shards by combining granulated sugar and water in a saucepan. Bring to a boil, allowing it to turn amber in color, then pour onto a parchment-lined baking sheet. Let it cool before breaking into shards.

Notes

Store any leftover tart in an airtight container in the refrigerator, best consumed within 3-4 days. Keep caramel shards in a cool, dry place.
