- 1 pre-made tart crust
- 2 cups eggnog
- 3/4 cup heavy cream
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup granulated sugar (for caramel shards)
- 1/2 cup water (for caramel shards)
Instructions
- In a saucepan, combine the eggnog, heavy cream, sugar, and cornstarch. Whisk over medium heat until warmed and the sugar has dissolved.
- In a separate bowl, whisk the egg yolks until well-beaten. Gradually add the warm eggnog mixture to the yolks while whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes. Remove from heat, stir in the vanilla extract, and pour this creamy mixture into the pre-made tart crust.
- Refrigerate the tart until it sets, approximately 4 hours. While the tart is chilling, prepare the caramel shards by combining granulated sugar and water in a saucepan. Bring to a boil, allowing it to turn amber in color, then pour onto a parchment-lined baking sheet. Let it cool before breaking into shards.
Notes
Store any leftover tart in an airtight container in the refrigerator, best consumed within 3-4 days. Keep caramel shards in a cool, dry place.
