Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  2. Stir in garlic and cook for an additional minute.
  3. Add zucchini, green beans, diced tomatoes, vegetable broth, thyme, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, until vegetables are tender.
  5. Serve hot, garnished with fresh parsley.

Notes

Feel free to mix and match your favorite vegetables. For a heartier soup, you can add beans or lentils. Adjust seasonings to suit your taste.
