Description

A comforting casserole using leftover turkey and fresh spinach, perfect for family gatherings or busy weeknights.


Ingredients

  • 2 cups cooked turkey, shredded
  • 2 cups fresh spinach, chopped
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1 cup cooked rice or pasta
  • 1/2 cup onion, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded turkey, chopped spinach, cream of mushroom soup, cooked rice or pasta, chopped onion, garlic powder, thyme, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased casserole dish and spread it evenly. Top with shredded cheese and breadcrumbs if using. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
  4. Let the casserole cool for a few minutes before serving to allow it to set slightly. Enjoy warm.

Notes

Perfect for using leftover turkey. You can add other vegetables for added nutrition.
