Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup sugar substitute (e.g., erythritol or stevia)
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and sugar substitute until smooth and light.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, mix together the almond flour, cocoa powder, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet.
  7. Flatten them slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until the edges look set.
  9. Let cool on a wire rack before serving.
