Ingredients

- 1/2 cup unsweetened cocoa powder
- 1/4 cup sugar substitute (e.g., erythritol or stevia)
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and sugar substitute until smooth and light.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, mix together the almond flour, cocoa powder, baking powder, and salt.
- Gradually blend the dry ingredients into the wet mixture until just combined.
- Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet.
- Flatten them slightly with the back of a spoon.
- Bake for 10-12 minutes or until the edges look set.
- Let cool on a wire rack before serving.
