Ingredients

  • 1 package frozen spinach, thawed and drained
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the thawed spinach, ricotta cheese, mozzarella cheese, eggs, Parmesan cheese, garlic powder, salt, and pepper. Mix well until combined.
  3. Spread the mixture into a greased casserole dish. Sprinkle breadcrumbs on top, if using. Bake for 30-35 minutes, until set and golden brown.
  4. Let cool for a few minutes before serving.

Notes

Use seasoned breadcrumbs for extra flavor or omit for a gluten-free option. Can be made ahead of time.
