- 1 cup lentils
- 1 cup rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 bell pepper, diced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the lentils and rice under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, chopped carrot, and diced bell pepper. Sauté until softened, about 5-7 minutes.
- Stir in the cumin and paprika, cooking for another minute until the spices become fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, reduce to simmer, cover, and cook for about 20 minutes. Add rice and more broth if needed. Simmer another 20 minutes or until tender.
- Serve hot, garnished with fresh parsley.
Notes
For a more robust flavor, add a bay leaf while cooking. For a spicier kick, add cayenne pepper or chopped jalapeños.
