Description

A hearty meal featuring soft lentils and fluffy rice, infused with aromatic spices and fresh vegetables. Perfect for lunch or dinner.


Ingredients

  • 1 cup lentils
  • 1 cup rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils and rice under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, chopped carrot, and diced bell pepper. Sauté until softened, about 5-7 minutes.
  3. Stir in the cumin and paprika, cooking for another minute until the spices become fragrant.
  4. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, reduce to simmer, cover, and cook for about 20 minutes. Add rice and more broth if needed. Simmer another 20 minutes or until tender.
  5. Serve hot, garnished with fresh parsley.

Notes

For a more robust flavor, add a bay leaf while cooking. For a spicier kick, add cayenne pepper or chopped jalapeños.
