Ingredients

  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 whole wheat pita pockets
  • 1/2 cup hummus
  • Fresh parsley or cilantro for garnish

Instructions
