  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • Mini lettuce cups
  • Diced tomatoes
  • Cucumber, diced
  • Tahini sauce (for drizzling)

Instructions

  1. Preparation: Gather all your ingredients.
  2. Mixing: In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and pepper; pulse until combined with some chunkiness.
  3. Binding: Stir in breadcrumbs until the mixture holds together well enough to shape.
  4. Cooking: Heat olive oil in a skillet, shape the mixture into small balls or patties, and cook until golden brown on both sides, about 3-4 minutes per side.
  5. Assembling: Place cooked falafel in mini lettuce cups, top with diced tomatoes and cucumber, then drizzle with tahini sauce.

Store leftovers separately: keep falafel in an airtight container for up to 3 days and toppings in the fridge for not more than 2 days.
