- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup feta cheese, crumbled

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the zucchini, red and yellow peppers, cherry tomatoes, onion, and garlic.
- Drizzle with olive oil, oregano, basil, salt, and pepper, and toss to combine.
- Spread the veggie mixture in a baking dish.
- Sprinkle crumbled feta cheese on top.
- Bake for 25-30 minutes or until the vegetables are tender.
- Garnish with fresh parsley before serving.
