Ingredients

  • 2 cups zucchini, chopped
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the zucchini, red and yellow peppers, cherry tomatoes, onion, and garlic.
  3. Drizzle with olive oil, oregano, basil, salt, and pepper, and toss to combine.
  4. Spread the veggie mixture in a baking dish.
  5. Sprinkle crumbled feta cheese on top.
  6. Bake for 25-30 minutes or until the vegetables are tender.
  7. Garnish with fresh parsley before serving.
