Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the granulated sugar and butter until light and fluffy.
- Beat in the egg, fresh lemon juice, and lemon zest until fully combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the flour mixture to the creamed mixture and stir until just combined.
- Chill the dough in the refrigerator for 30 minutes.
- Roll the dough into small balls and coat them in powdered sugar.
- Place the cookies on a baking sheet lined with parchment paper, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the tops have cracked.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
