Ingredients

  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup powdered sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the granulated sugar and butter until light and fluffy.
  3. Beat in the egg, fresh lemon juice, and lemon zest until fully combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the flour mixture to the creamed mixture and stir until just combined.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Roll the dough into small balls and coat them in powdered sugar.
  8. Place the cookies on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set and the tops have cracked.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
