- 10 corn tortillas
- 2 cups shredded cooked chicken
- 2 cups enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the diced onions in a skillet until soft and translucent.
- Add shredded cooked chicken, cumin, chili powder, and a pinch of salt to the skillet; mix well until combined and heated through.
- Warm the tortillas in the microwave for about 20-30 seconds.
- Spread enchilada sauce on the bottom of a baking dish, fill each tortilla with the chicken mixture, roll them up tightly, and place seam side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake in preheated oven for 20-25 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro if desired before serving.
Notes
