Ingredients

  • 10 corn tortillas
  • 2 cups shredded cooked chicken
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 small onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the diced onions in a skillet until soft and translucent.
  3. Add shredded cooked chicken, cumin, chili powder, and a pinch of salt to the skillet; mix well until combined and heated through.
  4. Warm the tortillas in the microwave for about 20-30 seconds.
  5. Spread enchilada sauce on the bottom of a baking dish, fill each tortilla with the chicken mixture, roll them up tightly, and place seam side down in the baking dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake in preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  8. Garnish with chopped cilantro if desired before serving.

Notes
