Ingredients

  • 4 cups chicken broth
  • 2 large eggs
  • 2 green onions, chopped
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. In a small bowl, mix cornstarch and water to create a slurry, then add to the boiling broth, stirring constantly.
  3. Reduce the heat to a simmer.
  4. In a separate bowl, beat the eggs and slowly pour into the simmering broth while stirring gently. Add chopped green onions and season with salt and pepper to taste. Serve warm.

Notes

Use fresh chicken broth for the best flavor. Garnish with extra green onions for a pop of color.
