Ingredients

  • 2 cups potatoes, peeled and diced
  • 2 cups fresh spinach, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until soft and fragrant, about 3-4 minutes.
  2. Add the diced potatoes and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, about 15 minutes.
  3. Stir in the chopped spinach and let it cook for an additional 5 minutes, allowing the spinach to wilt and blend with the soup.
  4. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender. Mix in the heavy cream or coconut milk, and season with salt and pepper. Serve hot and enjoy!

Notes

For extra flavor, consider adding fresh herbs during cooking. Use coconut milk for a vegan option, and stir in cheese for a cheesy twist.
