Instructions

  1. In a blender, combine the diced mangoes, coconut milk, heavy cream, sugar, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth.

  3. Cook the mixture while stirring until it thickens and starts to bubble, about 5-10 minutes.
  4. Remove the saucepan from heat and let it cool slightly. Divide the pudding into cups or bowls and refrigerate for at least 2 hours until set. Serve chilled, garnished with additional mango or a dollop of whipped cream if desired.
