- 1 cup coconut milk
- 1/2 cup heavy cream
- 1/4 cup sugar

Instructions
- In a blender, combine the diced mangoes, coconut milk, heavy cream, sugar, cornstarch, vanilla extract, and a pinch of salt. Blend until smooth.
- Pour the mixture into a saucepan over medium heat. Stir constantly to combine the ingredients thoroughly.
- Cook the mixture while stirring until it thickens and starts to bubble, about 5-10 minutes.
- Remove the saucepan from heat and let it cool slightly. Divide the pudding into cups or bowls and refrigerate for at least 2 hours until set. Serve chilled, garnished with additional mango or a dollop of whipped cream if desired.
Notes
Make sure your mangoes are ripe for the best flavor. For a dairy-free version, substitute heavy cream with additional coconut milk. Stir consistently during cooking to prevent sticking.
