Instructions
- In a bowl, whisk together the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and pinch of salt until well combined.
- Let the mixture sit for about 10 minutes, then stir again to prevent the chia seeds from clumping together.
- Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens to a pudding-like consistency.
- Serve chilled, topped with fresh fruit or nuts if desired.
Notes
For a richer flavor, allow the pudding to chill overnight. Adjust sweetness to your liking.
