- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (like bell peppers or spinach)
- Salt and pepper to taste
- Optional: herbs or spices for flavor
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
- In a mixing bowl, whisk together the eggs, cottage cheese, salt, pepper, and any herbs or spices you might want to add.
- Stir in the diced vegetables and shredded cheese until evenly distributed in the mixture. Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow the egg bites to cool slightly before removing them from the muffin tin and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months.
