Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers or spinach)
  • Salt and pepper to taste
  • Optional: herbs or spices for flavor

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, salt, pepper, and any herbs or spices you might want to add.
  3. Stir in the diced vegetables and shredded cheese until evenly distributed in the mixture. Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
  4. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  5. Allow the egg bites to cool slightly before removing them from the muffin tin and serve warm.
