  • 1 lb white fish fillets (like tilapia or mahi-mahi)
  • 2 tablespoons blackening spice
  • 2 tablespoons olive oil
  • 2 cups cooked rice (white or brown)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded lettuce
  • Lime wedges
  • Fresh cilantro, for garnish

Instructions

  1. Preheat a skillet over medium-high heat and add olive oil.
  2. Rub the fish fillets with blackening spice on both sides.
  3. Cook the fish in the hot skillet for about 3-4 minutes per side until cooked through and flaky.
  4. Remove the fish from the skillet, let it rest, then flake apart.
  5. In serving bowls, layer rice, black beans, corn, diced avocado, cherry tomatoes, shredded lettuce, and flaked fish.
