- 2 tablespoons blackening spice
- 2 tablespoons olive oil
- 2 cups cooked rice (white or brown)
- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded lettuce
- Lime wedges
- Fresh cilantro, for garnish
Instructions
- Preheat a skillet over medium-high heat and add olive oil.
- Rub the fish fillets with blackening spice on both sides.
- Cook the fish in the hot skillet for about 3-4 minutes per side until cooked through and flaky.
- Remove the fish from the skillet, let it rest, then flake apart.
- In serving bowls, layer rice, black beans, corn, diced avocado, cherry tomatoes, shredded lettuce, and flaked fish.
- Squeeze lime juice over the top and garnish with fresh cilantro before serving.
