Instructions
- Begin by rinsing the dried black eyed peas under cold water to remove any dirt or debris. In a large pot, combine the rinsed peas, vegetable broth, water, and salt.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer.
- Let the peas cook for 40 to 50 minutes until they are just tender but still hold their shape. For a creamier texture, cook them an additional 15 minutes.
- Once the cooking time is up, drain the peas and return them to the pot. Stir in the grated garlic, smoked paprika, oregano, onion powder, and butter (if using). Turn the heat up slightly and stir vigorously until the mixture forms a rich, creamy sauce.
