A warm and hearty casserole that combines seasonal vegetables with wholesome grains for a comforting meal.
Ingredients

- 2 cups of mixed seasonal vegetables (butternut squash, carrots, bell peppers)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1 cup of quinoa or rice
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 cup of shredded cheese (optional)
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the mixed seasonal vegetables, chopped onion, minced garlic, quinoa or rice, vegetable broth, thyme, oregano, salt, and pepper; stir until well blended.
- Transfer the mixture into a greased casserole dish and spread evenly.
- If using cheese, sprinkle it over the top, drizzle olive oil, cover with foil, and bake for 30 minutes.
- Remove foil and bake for an additional 15-20 minutes until vegetables are tender and cheese is melted. Allow to cool before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions for up to 2 months.
