Description

A warm and hearty casserole that combines seasonal vegetables with wholesome grains for a comforting meal.


Ingredients

  • 2 cups of mixed seasonal vegetables (butternut squash, carrots, bell peppers)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1 cup of quinoa or rice
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 cup of shredded cheese (optional)
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the mixed seasonal vegetables, chopped onion, minced garlic, quinoa or rice, vegetable broth, thyme, oregano, salt, and pepper; stir until well blended.
  3. Transfer the mixture into a greased casserole dish and spread evenly.
  4. If using cheese, sprinkle it over the top, drizzle olive oil, cover with foil, and bake for 30 minutes.
  5. Remove foil and bake for an additional 15-20 minutes until vegetables are tender and cheese is melted. Allow to cool before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions for up to 2 months.
