- 200g dark chocolate
- 3 eggs, separated
- 50g sugar
- 300ml heavy cream
- 1 tsp vanilla extract
- A pinch of salt
- Chocolate shavings or berries for garnish (optional)
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Allow to cool slightly.
- In a separate bowl, beat the egg yolks with the sugar until pale and fluffy. Stir in the cooled melted chocolate along with the vanilla extract.
- In another bowl, whip the heavy cream until soft peaks form.
- Whisk the egg whites with a pinch of salt until stiff peaks form. Fold the whipped cream into the chocolate mixture, then fold in the egg whites until fully combined.
- Pour the mousse into a cake mold or bowl and refrigerate for at least 4 hours until set.
- Garnish with chocolate shavings or fresh berries before serving.
Notes
For the best flavor, use high-quality dark chocolate with at least 70% cocoa.
