Ingredients

Scale
  • 200g dark chocolate
  • 3 eggs, separated
  • 50g sugar
  • 300ml heavy cream
  • 1 tsp vanilla extract
  • A pinch of salt
  • Chocolate shavings or berries for garnish (optional)

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Allow to cool slightly.
  2. In a separate bowl, beat the egg yolks with the sugar until pale and fluffy. Stir in the cooled melted chocolate along with the vanilla extract.
  3. In another bowl, whip the heavy cream until soft peaks form.
  4. Whisk the egg whites with a pinch of salt until stiff peaks form. Fold the whipped cream into the chocolate mixture, then fold in the egg whites until fully combined.
  5. Pour the mousse into a cake mold or bowl and refrigerate for at least 4 hours until set.
  6. Garnish with chocolate shavings or fresh berries before serving.

Notes

For the best flavor, use high-quality dark chocolate with at least 70% cocoa.
