Description

Deliciously rich and sumptuous, these muffins are perfect for breakfast, a snack, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 & 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 cup plain yogurt
  • 1/3 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup chocolate chips or chunks

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt until evenly blended. Set aside.
  3. In a larger bowl, mix together brown sugar, eggs, yogurt, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the dry ingredients over the wet ingredients and mix until just combined. Fold in chocolate chips.
  5. Portion the batter into lined muffin cups, filling each one to the top. Bake for 15 to 20 minutes, or until a skewer comes out clean.
  6. Let them cool for 10 minutes in the pan before transferring to a wire rack.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
