Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the mashed bananas and melted butter together until well combined. Stir in the sugar, egg, and vanilla extract.
- Gradually mix in the baking soda and salt. Then add the flour and cocoa powder, stirring until just combined. Gently fold in the chocolate chips.
- Divide the batter among the muffin cups and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.
Notes
For deeper chocolate flavor, consider using dark cocoa powder. Make sure to use very ripe bananas for sweetness and moisture.
