Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas and melted butter together until well combined. Stir in the sugar, egg, and vanilla extract.
  3. Gradually mix in the baking soda and salt. Then add the flour and cocoa powder, stirring until just combined. Gently fold in the chocolate chips.
  4. Divide the batter among the muffin cups and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.

Notes

For deeper chocolate flavor, consider using dark cocoa powder. Make sure to use very ripe bananas for sweetness and moisture.
