Description

A delightful and quirky dish combining bacon, crunchy dill pickles, and creamy dressing with chewy pasta, perfect for picnics and potlucks.


Ingredients

  • 8 ounces pasta (e.g., rotini or penne)
  • 1 cup dill pickles, diced
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon dill weed
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water. Drain and cool.
  2. Combine cooled pasta, diced dill pickles, chopped bacon, and finely chopped red onion in a large bowl. Stir gently.
  3. Mix mayonnaise, sour cream, dill weed, salt, and pepper in a separate bowl until smooth.
  4. Pour the dressing over the pasta mixture and toss until combined. Chill in the refrigerator for at least 1 hour.

Notes

For a lighter version, use turkey bacon. Adjust pickles and onions as preferred. If too thick after chilling, add pickle juice or milk to loosen.
