Instructions
- Place the eggs into a saucepan and cover them with water. Bring to a boil over medium-high heat. Once boiling, cover the pan and remove from heat; let sit for 12 minutes.
- Transfer the eggs to a bowl of ice water or run under cold water to cool quickly.
- Carefully peel the cooled eggs and slice each egg in half lengthwise, scooping out the yolks into a mixing bowl.
- Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth. Adjust seasoning to taste.
- Fill the egg white halves with the yolk mixture using a spoon or piping bag.
- Sprinkle paprika over the filled eggs and garnish with chives or parsley if desired.
- Serve chilled or at room temperature.
Notes
For perfect results, avoid overcooking the eggs to prevent green discoloration of the yolks. Feel free to customize with spices or herbs.
