Ingredients

- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Paprika for garnish
- Chives or parsley for garnish (optional)
Instructions
- Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat.
- Once boiling, cover the pot and remove from heat. Let sit for 10-12 minutes.
- Drain the hot water and cool the eggs in ice water for about 5 minutes.
- Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, mustard, salt, and pepper, and mash until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and garnish with chives or parsley if desired.
- Serve chilled.
Notes
Use eggs that are a few days old for easier peeling. Prepare a few hours in advance and store them in the fridge until serving.
