Ingredients

  • 1 cup Greek yogurt
  • 1 cup rolled oats
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup flour (whole wheat or all-purpose)
  • Optional: nuts or seeds for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together Greek yogurt, oats, eggs, and honey or maple syrup until well combined.
  3. In a separate bowl, whisk together baking powder, baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and sprinkle nuts or seeds on top if desired.
  6. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool before slicing.
