- 200g pitted dates, chopped
- 100g walnuts, chopped
- 200g all-purpose flour
- 150g brown sugar
- 100g unsalted butter, melted
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 200ml milk
Instructions
- Preheat the oven to 180°C (350°F) and grease a traybake tin.
- In a large bowl, combine the chopped dates, walnuts, flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the melted butter, brown sugar, eggs, vanilla extract, and milk until smooth.
- Gradually add the wet mixture to the dry ingredients and mix until just combined.
- Pour the batter into the prepared tin and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into squares.
Notes
Serve warm or at room temperature, with whipped cream or ice cream. Store in an airtight container for up to 3 days, refrigerate for a week, or freeze for 3 months.
