Description
A delightful dish that balances creamy textures with a spicy kick and a satisfying crunch, perfect as an appetizer or light lunch.
Ingredients
Scale
- 1 can white beans (such as cannellini or navy beans), drained and rinsed
- 1 tablespoon curry powder
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 baguette, sliced into 1/2-inch pieces
- 1/2 cup pepitas (pumpkin seeds), toasted
- Fresh herbs (such as cilantro or parsley) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mash the white beans with curry powder, olive oil, lemon juice, salt, and pepper until creamy.
- Arrange baguette slices on a baking sheet and brush with olive oil. Toast in the oven for about 5-7 minutes until golden.
- Spread the curried white bean mixture on each toast. Top with toasted pepitas and garnish with fresh herbs. Serve immediately.
Notes
Store leftover curried white bean mixture in an airtight container in the refrigerator for up to 3 days. For best results, consume the crostinis fresh, as the toasted bread can become soggy when stored.
