Description

A comforting and creamy potato soup that’s easy to make in a crockpot, perfect for chilly evenings.


Ingredients

  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • Salt and pepper to taste
  • Optional toppings: cheese, green onions, bacon bits

Instructions

  1. Place the diced potatoes, chopped onion, and minced garlic into the crockpot.
  2. Pour the vegetable broth over the vegetables in the crockpot.
  3. Set the crockpot to low and cook for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  4. Blend the soup until smooth using an immersion blender or mash for a chunkier texture. Stir in the milk and season with salt and pepper.

Store leftovers in an airtight container for up to 4-5 days in the refrigerator, or freeze for up to 3 months.
