Ingredients

- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- Salt and pepper to taste
- Optional toppings: cheese, green onions, bacon bits
Instructions
- Place the diced potatoes, chopped onion, and minced garlic into the crockpot.
- Pour the vegetable broth over the vegetables in the crockpot.
- Set the crockpot to low and cook for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- Blend the soup until smooth using an immersion blender or mash for a chunkier texture. Stir in the milk and season with salt and pepper.

Store leftovers in an airtight container for up to 4-5 days in the refrigerator, or freeze for up to 3 months.
