Ingredients

  • 1 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • Salt and pepper to taste
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together the orange juice, soy sauce, honey, garlic, and ginger until well combined.
  2. Place the chicken breasts in the crockpot and pour the freshly made orange sauce over the top, ensuring the chicken is well coated.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
  4. Once the chicken is cooked, remove it from the crockpot and shred it using two forks. In a small bowl, mix cornstarch with a little water to create a slurry. Stir this into the crockpot sauce and cook for an additional 15 minutes on high to thicken it. Return the shredded chicken to the pot, mix well, and enjoy!

Notes

Serve over white rice or jasmine rice; add steamed vegetables for a balanced meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
