Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup fresh lemon juice
  • 1/2 cup capers
  • 1/4 cup chopped parsley
  • 1 teaspoon garlic powder

Instructions

  1. Season chicken breasts with salt and pepper, then coat with flour.
  2. Heat olive oil in a skillet and brown chicken breasts for 3-4 minutes on each side.
  3. Transfer browned chicken to the crockpot.
  4. In the skillet, combine chicken broth, lemon juice, capers, and garlic powder, then bring to a simmer.
  5. Pour the sauce over the chicken in the crockpot.
  6. Cover and cook on low for 4-6 hours until chicken is fork-tender.
  7. Garnish with chopped parsley before serving.
