- 2 lbs boneless, skinless chicken thighs
- 1 cup bourbon
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 tablespoons cornstarch
- 2 tablespoons water
- Green onions, for garnish
Instructions
- In a crockpot, combine the chicken thighs, bourbon, soy sauce, brown sugar, ketchup, garlic, ginger, black pepper, and red pepper flakes. Mix everything evenly.
- Cover the crockpot and cook on low for 360-480 minutes (6-8 hours) or on high for 180-240 minutes (3-4 hours).
- About 30 minutes before serving, mix the cornstarch and water until smooth. Stir into the sauce in the crockpot to thicken.
- Just before serving, stir the dish to distribute the sauce and garnish with chopped green onions.
Notes
Pairs well with steamed rice or mashed potatoes. Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
