Crockpot Black Eyed Peas

Description

A comforting dish of hearty black-eyed peas cooked with smoky bacon, garlic, and spices in a slow cooker, perfect for chilly evenings or gatherings.


Ingredients

  • 1 pound black eyed peas
  • 8 slices of bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • 1 teaspoon thyme
  • 2 bay leaves

Instructions

  1. Rinse and soak the black-eyed peas in water for at least 6 hours or overnight. Drain and set aside.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and leave the grease in the skillet.
  3. Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. In your crockpot, combine the soaked black-eyed peas, crispy bacon, sautéed onion and garlic, chicken broth, black pepper, cayenne pepper, thyme, bay leaves, and salt. Stir well and cook on low for 6-8 hours until the peas are tender.

Notes

Great as a side dish or main course. Can be served with cornbread or over rice.
