A comforting dish of hearty black-eyed peas cooked with smoky bacon, garlic, and spices in a slow cooker, perfect for chilly evenings or gatherings.

- 1 pound black eyed peas
- 8 slices of bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- Salt to taste
- 1 teaspoon thyme
- 2 bay leaves
Instructions
- Rinse and soak the black-eyed peas in water for at least 6 hours or overnight. Drain and set aside.
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and leave the grease in the skillet.
- Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- In your crockpot, combine the soaked black-eyed peas, crispy bacon, sautéed onion and garlic, chicken broth, black pepper, cayenne pepper, thyme, bay leaves, and salt. Stir well and cook on low for 6-8 hours until the peas are tender.
Notes
Great as a side dish or main course. Can be served with cornbread or over rice.
