Ingredients

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 4 tbsp olive oil
  • 4 cloves minced garlic
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to about 1/2 inch thickness.
  3. Combine Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper in a shallow dish.
  4. Place the flour on a separate plate and whisk eggs and milk in another bowl.
  5. Dredge each chicken breast in flour, then dip in egg mixture, and coat with the breadcrumb mixture.
  6. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat and add coated chicken.
  7. Cook for about 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until chicken is cooked through.
  9. For the garlic sauce, heat remaining olive oil in a small saucepan, add minced garlic and sauté for 1-2 minutes.
  10. Stir in chicken broth, bring to a simmer, then reduce heat and add heavy cream, stirring until the sauce thickens.
  11. Pour garlic sauce over the chicken and sprinkle with fresh chopped parsley before serving.

Notes

Marinate chicken breasts in olive oil and herbs for extra flavor. Use panko for the best crispy texture.
