Crunchy oven-baked chicken taquitos filled with shredded chicken, black beans, and cheese.

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup green onions, chopped
  • 1 teaspoon taco seasoning
  • 12 small corn tortillas
  • Cooking spray or oil for brushing
  • Salsa and sour cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the shredded chicken, cheese, black beans, green onions, and taco seasoning in a bowl and mix until well incorporated.
  3. Warm the tortillas in a microwave for 20-30 seconds until pliable.
  4. Place a small amount of filling on each tortilla, roll tightly, and place seam side down on a baking sheet. Lightly spray with cooking spray, then bake for 15-20 minutes or until golden brown and crispy. Serve hot with salsa and sour cream.
