- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup green onions, chopped
- 1 teaspoon taco seasoning
- 12 small corn tortillas
- Cooking spray or oil for brushing
- Salsa and sour cream for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Combine the shredded chicken, cheese, black beans, green onions, and taco seasoning in a bowl and mix until well incorporated.
- Warm the tortillas in a microwave for 20-30 seconds until pliable.
- Place a small amount of filling on each tortilla, roll tightly, and place seam side down on a baking sheet. Lightly spray with cooking spray, then bake for 15-20 minutes or until golden brown and crispy. Serve hot with salsa and sour cream.
Notes
Ensure tortillas are warm to prevent cracking. Consider flipping taquitos halfway through for extra crispiness.
