- 1 lb cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup green onions, chopped
- 1/2 cup salsa
- 1 tsp cumin
- 1 tsp garlic powder
- 12 small corn tortillas
- Cooking spray
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Combine the shredded chicken with cheese, green onions, salsa, cumin, garlic powder, and a sprinkle of salt and pepper in a large bowl.
- Warm the corn tortillas in a skillet over low heat for about 30 seconds on each side.
- Spoon a portion of the chicken mixture onto the center of each tortilla and roll it up tightly.
- Lightly spray the tops of the taquitos with cooking spray.
- Bake in the preheated oven for 15-20 minutes or until crispy and golden brown.
- Serve warm with additional salsa or guacamole for dipping.
