Ingredients

  • 1 lb cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup green onions, chopped
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 12 small corn tortillas
  • Cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the shredded chicken with cheese, green onions, salsa, cumin, garlic powder, and a sprinkle of salt and pepper in a large bowl.
  3. Warm the corn tortillas in a skillet over low heat for about 30 seconds on each side.
  4. Spoon a portion of the chicken mixture onto the center of each tortilla and roll it up tightly.
  5. Lightly spray the tops of the taquitos with cooking spray.
  6. Bake in the preheated oven for 15-20 minutes or until crispy and golden brown.
  7. Serve warm with additional salsa or guacamole for dipping.
