- 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch pieces)
- 1/2 cup all-purpose flour
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 2 tbsp milk (or water)
- 1.5 cups Panko breadcrumbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray as needed
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
- In a medium bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. In another bowl, whisk together the eggs and milk (or water). Finally, place the Panko breadcrumbs in a third bowl, seasoned with a pinch of salt and pepper.
- Take each piece of chicken and first coat it in the flour mixture, shaking off any excess. Then, dip it into the egg mixture before transferring it to the Panko breadcrumbs, pressing down gently to ensure an even coating.
- Once all the chicken pieces are coated, spray the top of the nuggets lightly with cooking spray. Bake in the preheated oven for about 20 minutes, or until the nuggets are golden brown and cooked through, flipping them halfway for even cooking.
Notes
Serve with a variety of dipping sauces such as barbecue, honey mustard, or ranch. These nuggets make great lunchbox additions and can be stored in the refrigerator for up to 3 days.
