Ingredients

  • 1 lb gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the cooked gnocchi to the skillet and cook until crispy and golden brown, about 5-7 minutes, stirring occasionally.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
