- 1 lb gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes.
- Add the cooked gnocchi to the skillet and cook until crispy and golden brown, about 5-7 minutes, stirring occasionally.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and sprinkle the feta cheese over the top, allowing it to melt slightly from residual heat.
- Season with salt and pepper to taste, then serve immediately.
