  • 1 cup cornstarch
  • 2 tablespoons vegetable oil (for frying)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 23 tablespoons dried red chillies (adjust to taste)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 spring onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preparation: Begin by preparing the beef. Slice the beef fillet into thin strips (about 1/4 inch thick), making sure to cut against the grain for tenderness.
  2. Coating: In a large bowl, toss the beef strips with cornstarch until they are evenly coated. Let the beef sit for about 10 minutes to allow the cornstarch to adhere.
  3. Frying: Heat the vegetable oil in a deep frying pan or wok over medium-high heat until hot. Carefully add the coated beef strips in small batches and fry for about 3-4 minutes, or until golden brown and crispy. Remove and drain on paper towels.
  4. Sautéing: In a separate pan, heat a small amount of oil over medium heat. Add the minced garlic, minced ginger, and dried red chillies. Sauté for about 30 seconds until fragrant. Add the sliced onion and bell peppers, stir-fry for about 2-3 minutes until slightly softened but crisp.
  5. Combining: In a small bowl, mix soy sauce, oyster sauce, rice vinegar, and a pinch of salt and pepper. Pour the sauce over the vegetables, stirring to combine.
  6. Finishing: Add the crispy beef to the sauce-covered vegetables and toss until well coated and heated through. Garnish with chopped spring onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet for best results.
