- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook until golden brown, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook for 2-3 minutes until softened. Stir in spinach, allowing it to wilt.
- Pour in heavy cream, add Parmesan cheese and Italian seasoning, stirring until everything is well combined and creamy.
- Return chicken to the skillet, coating each piece with sauce. Let simmer for a few minutes until heated through.
- Garnish with fresh basil before serving.
Notes
For extra flavor, marinate the chicken in olive oil, garlic, and Italian herbs for an hour before cooking.
