Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook until golden brown, about 6-7 minutes per side. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  3. Add cherry tomatoes and cook for 2-3 minutes until softened. Stir in spinach, allowing it to wilt.
  4. Pour in heavy cream, add Parmesan cheese and Italian seasoning, stirring until everything is well combined and creamy.
  5. Return chicken to the skillet, coating each piece with sauce. Let simmer for a few minutes until heated through.
  6. Garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken in olive oil, garlic, and Italian herbs for an hour before cooking.
