Description

A delightful dish combining rich flavors with creamy tomatoes and garlic, perfect for a quick weeknight dinner.

Ingredients

Scale
  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes (diced)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until golden brown and fragrant.
  3. Add diced tomatoes, salt, and pepper to the skillet. Simmer for about 5 minutes until the tomatoes start to soften.
  4. Lower the heat and stir in the heavy cream until well blended.
  5. Toss the cooked pasta in the sauce until evenly coated.
  6. Serve topped with fresh basil and optional grated Parmesan cheese.

Notes

Use fresh tomatoes for best flavor; opt for canned San Marzano if out of season. Consider adding protein like grilled chicken or shrimp.
