Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it’s translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
- Stir in the crushed tomatoes and vegetable broth. Bring to a simmer and cook for about 15 minutes.
- Remove from heat and blend the soup until smooth.
- Return the blended soup to heat and add the heavy cream and chopped basil, stirring until warmed through.
- Season with salt and pepper to taste, and serve hot.
Notes
Pairs beautifully with crusty bread and grilled cheese sandwiches. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
