Ingredients
- Pasta (your choice)
- Roasted red peppers
- Cottage cheese or Greek yogurt
- Garlic
- Olive oil
- Salt
- Pepper
- Parmesan cheese (optional)
- Fresh basil (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Combine roasted red peppers, cottage cheese or Greek yogurt, garlic, olive oil, salt, and pepper in a blender and blend until smooth.
- Add the blended sauce to a large skillet over medium heat and cook for about 5 minutes.
- Toss the cooked pasta in the sauce until well coated. If desired, mix in Parmesan cheese. Serve hot, garnished with fresh basil if using.
Notes
For a spicier kick, add red pepper flakes. You can also substitute cottage cheese or Greek yogurt with sour cream.
