Description

A delightful pasta dish featuring roasted red peppers, garlic, and a creamy sauce, perfect for quick weeknight dinners.


Ingredients

  • Pasta (your choice)
  • Roasted red peppers
  • Cottage cheese or Greek yogurt
  • Garlic
  • Olive oil
  • Salt
  • Pepper
  • Parmesan cheese (optional)
  • Fresh basil (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Combine roasted red peppers, cottage cheese or Greek yogurt, garlic, olive oil, salt, and pepper in a blender and blend until smooth.
  3. Add the blended sauce to a large skillet over medium heat and cook for about 5 minutes.
  4. Toss the cooked pasta in the sauce until well coated. If desired, mix in Parmesan cheese. Serve hot, garnished with fresh basil if using.

Notes

For a spicier kick, add red pepper flakes. You can also substitute cottage cheese or Greek yogurt with sour cream.
