- 1 medium pumpkin, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the curry powder and cook for another minute, allowing the spices to release their fragrance.
- Add the pumpkin cubes and stir until they are well coated with the spices. Pour in the coconut milk and bring to a simmer. Cook for about 15-20 minutes, or until the pumpkin is tender. Season with salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For an elevated dish, serve with rice, quinoa, or naan bread, and consider adding lime juice or yogurt for contrast. This curry also tastes better the next day.
