- 250g orzo pasta
- 200g prawns, peeled and deveined
- 1 cup sun-dried tomatoes, chopped
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the prawns to the pan and cook until they turn pink, which should take about 3-4 minutes.
- Stir in the orzo and sun-dried tomatoes, then pour in the broth. Bring the mixture to a boil and then reduce the heat to a simmer.
- Cook until the orzo is tender and most of the broth has been absorbed, about 10-12 minutes.
- Stir in the heavy cream and parmesan cheese until melted and creamy. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh basil for an extra burst of flavor and color.
