Ingredients

  • 250g orzo pasta
  • 200g prawns, peeled and deveined
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the prawns to the pan and cook until they turn pink, which should take about 3-4 minutes.
  3. Stir in the orzo and sun-dried tomatoes, then pour in the broth. Bring the mixture to a boil and then reduce the heat to a simmer.
  4. Cook until the orzo is tender and most of the broth has been absorbed, about 10-12 minutes.
  5. Stir in the heavy cream and parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh basil for an extra burst of flavor and color.
