Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat the broth and keep it warm over low heat.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the diced onions and minced garlic, and sauté until translucent and fragrant, about 2-3 minutes.
  3. Add the sliced mushrooms to the skillet and cook for about 5 minutes until soft.
  4. Stir in the Arborio rice, cooking for 1-2 minutes until slightly toasted.
  5. Pour in the dry white wine, stirring until fully absorbed.
  6. Slowly add the warmed broth, one ladle at a time, stirring frequently until absorbed (approximately 18-20 minutes).
  7. Remove from heat, and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

Use warm broth for even cooking. Do not rinse Arborio rice to retain starch. Regular stirring is key to creamy texture. Experiment with different mushrooms for unique flavors.
