- 2 large potatoes
- 3 cloves garlic, minced
- 1 cup sour cream

Instructions
- Peel and chop the potatoes into small cubes. Boil them in a pot of salted water until tender, approximately 15 minutes. Drain and let cool slightly.
- In a mixing bowl, combine the boiled potatoes and minced garlic. Mash until smooth.
- Add the sour cream, cream cheese, and olive oil. Mix until creamy and well combined.
- Season with salt and pepper to taste. Transfer to a serving bowl and garnish with chopped chives. Serve with chips or vegetable sticks.
